- · Novel production: Using gene editing and precision fermentation techniques, Every can use genetically modified yeast to produce key egg white proteins at scale, which are identical to real egg proteins and can be used as a direct substitute for eggs in most applications. Additionally, Every is also “mining” the egg for more rare proteins that have unique functionalities but are not commercially viable to harvest today due to their small occurrence rate. By using microbes and fermentation to scale up production of these rare proteins, Every can unlock novel ingredients that were previously inaccessible.
- · Proprietary process: Every has made highly promising technical progress since founding, and their proprietary yeast strains have now reached exceptionally high productivity levels. Every has also developed a robust discovery platform powered by machine learning and high-throughput screening to develop and quickly test new strains and proteins. This has enabled R&D and rapid iteration capability which gives Every potential to become a broader protein engineering platform down the line.
- · Strong partnerships: The company is notably partnering with Anheuser-Busch InBev for fermentation scale up. AB InBev, a world-leader in high-volume fermentation, has recently spun out an entity called BioBrew to build up a large-scale contract fermentation service specifically for alternative food proteins. BioBrew chose Every as its first commercial partner and will work semi-exclusively with them for the next few years to scale up volumes.
The EVERY Company (“Every”) aims to disrupt the global egg market by using synthetic biology to produce alternative egg proteins without chickens. Due to increased consumer focus on a cleaner and more sustainable supply chain (which includes the cage-free movement), the global egg market is undergoing massive transformation and many large food and beverage (F&B) companies have committed to going 100% cage-free. However, there is currently not enough supply of cage-free eggs to meet this demand, therefore F&B customers are looking for a better substitute product that offers the same functionality as regular eggs – this is the market need that Every is targeting.
